
Zátiší Group, a renowned leader in the Czech gastronomic scene, brings to Holešovice Market a new project that combines traditional gastronomy with a modern approach. Restaurant Bourse focuses on the honest preparation of meat on an open fire. It will bring not only delicious meat dishes, but also their vegetarian alternatives to the historic space of the former slaughterhouse. Thus, it shows that meat does not necessarily belong in the building of a slaughterhouse.
The restaurant will have a strong link to quality local products and their careful processing by a variety of modern techniques. The main pillars of the concept will be not only meat prepared on the fire, but also homemade pastries and great beer.
The exchange will become not only a gastronomic but also a cultural center of the Holešovice market. The aim is to revitalize the whole space and support its transformation into a center of culture, gastronomy and relaxation, which will offer quality food and an authentic atmosphere for Prague residents and tourists alike. Zátiší Group looks forward to the fact that the opening of the Exchange will be the next step towards democratizing quality gastronomy. The opening is expected to take place towards the end of 2025.
In Holešovice Market Hall opposite Hall 22, a culinary project is being created that will bring a lively atmosphere to another Prague backyard. Two popular Ambiente businesses — the butcher shop Naše maso, the pastry shop Myšák and the brand new Slovak restaurant — together create a place that will live from morning to night. The Holešovice courtyard combines all three concepts — in the morning you can enjoy breakfast at Myšák with selected coffee and traditional Czech desserts, for lunch you can head for delicious steaks or burgers from Our meat or Slovak specialties and warm hospitality in the restaurant led by chef Tomáš Valković. The evening will include wine, fine dining and informal seating in the open air. The architectural form of the whole project was taken care of by Josef Pleskot. It should open at the turn of the summer and autumn of this year.
New Slovak restaurant will offer all-day operation with a focus on quick and comfortable meals to eat right in the backyard, but also fine dining for more discerning guests. The restaurant will have 30 seats and will focus on simple Slovak cuisine using both local and Slovak ingredients. The wine list offers a varied selection of Slovak wines, which will perfectly complement the menu.
Butcher Shop Our Meat, known from Dlouhá Street, will transfer its concept to Holešovice — it will sell quality meat and prepare butcher's specialties, including burgers and steaks, which visitors can enjoy on site.
Pastry Shop Myšák takes care of the sweet side of the Holešovice backyard. It offers classic Czech desserts, selected coffee and a relaxed atmosphere for morning sitting and afternoon desserts.
